These are techniques our ancestors used thousands of years ago, and chef Tom Halpin has brought them into a modern restaurant, adding his own take on fusion and signature cuisine. Tom Halpin is originally from Australia, has worked at Noma, and has spent many years traveling the world — Central and Latin America, Europe, Asia. In each country he studied local cooking methods and local ingredients, and now brings that experience together in the menu of his Moscow restaurant. The average check at «Maya» is 3,000–6,000 ₽.
