The «Zoe» bakery on Baskov Lane was opened by Sergei and Irina Zubchenok — the same people behind the Sivil coffee shop. The baking here is handled by Maxim Babich, whose name is already associated with a new wave of interest in bakeries in the city. Croissants, brioches, and sugar-dusted doughnuts line the open display case, and the entire kitchen is visible to guests: dough mixing, shaping, baking — nothing hidden behind walls. The center of the room is occupied by a three-tier deck oven, similar to those found in old houses. It holds 70 loaves at a time, and the sourdough bread made from wheat, rye, and whole-grain flour gets a thin, crispy crust and a soft crumb. The bread is sold to take away or served with dishes from a menu built around breakfast: porridges, pancakes, toasts, scrambles. Among the unusual items are a green spinach omelet with carrots in caramelized carrot juice and a layered danish with salmon and poached egg. Worth trying are the round sugar pastry in the style of "Sverdlovskaya" and Babich's babka — baked from croissant dough scraps on a zero-waste principle. You can reach «Zoe» from Chernyshevskaya, Ploshchad Vosstaniya, or Mayakovskaya metro stations.
