Poool

«Poool» is a bistro with a champagne bar on Ploshchad Vosstaniya, where Russian dacha-style gastronomy gets a modern interpretation. The venue is located in Saint Petersburg, at 1 Fontannaya Street. The concept's author is chef Vladimir Chistyakov, known for the Veter restaurant in Petersburg, the Alba, Bisou and Himitsu projects in Dubai, as well as the Moscow venue «Kultura Vstrechi». His cuisine is built on dishes familiar since childhood, which are reimagined here and served in a new form. On the menu you can find potatoes with black caviar — a simple dacha dish elevated to a gastronomic level. Another example of this approach is a cream of gobies in tomato sauce, referencing the canned goods from Soviet dacha tables, but prepared as a full-fledged restaurant dish. The champagne bar complements the gastronomic part of the project, offering drinks that pair with the author's interpretation of Russian cuisine. The bistro format sets a relaxed tone for the whole venue — here the cuisine remains serious, while the presentation and atmosphere create a light, dacha-like mood in the center of the city.
