The name refers to the ancient fermented sauce, and that's no coincidence: the kitchen is built around fermentation. The menu features house-made garums, fermented asparagus, and black garlic. The kitchen blends original recipes with Asian and European techniques, adding pan-Asian touches. The cocktail menu is designed in Japanese style: the drinks are numbered, with numbers four and nine skipped — in Japan they're considered unlucky.
