The meat is aged in specially equipped chambers with walls made of Himalayan salt, which absorbs excess moisture and purifies the air. The process takes anywhere from 21 to 120 days depending on the cut, at a temperature of 0 to +2 degrees Celsius and 80% humidity. During this time, the meat loses up to a quarter of its mass through moisture evaporation, and the resulting crust is completely trimmed off before serving. This aging process makes the muscle fibers more tender and intensifies the flavor and aroma, while also making the beef easier for the body to digest.
