Penaty

«Penaty» is located in Yaroslavl on Sovetskaya Street, in a wooden building dating back to the mid-18th century — the restaurant has operated here since 1999. Since 2009, the kitchen has been headed by chef Oleg Molotov, who studied at the Basque Culinary Center in San Sebastián and in Copenhagen, and also trained at Jean-Marc Villard's gastronomic atelier in Lyon, at Arzak, and at other Michelin-starred restaurants. The cuisine here is European and Russian, but even familiar dishes are presented as a small performance. Duck aspic is served with horseradish snow and mustard ice cream, glazed veal cheeks come with celery terrine and foie gras sauce, and duck breast is paired with pumpkin in truffle caramel and vegetable pastille. The "deconstructed" borscht deserves special mention — a dish that has become the restaurant's signature. The average check at «Penaty» ranges from 1,000 to 3,000 rubles — worth a visit to try classic recipes reinterpreted and to appreciate the work of a chef trained by masters of molecular gastronomy.
