The restaurant serves Volga cuisine, combining European and Russian traditions with local flavor. The menu uses produce from the restaurant's own farm and products characteristic of the Volgograd region: mustard oil, red tomatoes, steppe berries, local herbs, and sunflower seeds. A particular point of pride is the restaurant's own fish farm on the Volga, which supplies fresh Volga sturgeon and sterlet for the table. Signature dishes include Volga catfish in mustard oil with onions and tomatoes, sterlet with young zucchini and spinach in a cream sauce based on baked garlic and tarragon, and duck breast with asparagus, honeyed pumpkin, and a spiced cherry sauce.
