Sever-Metropol

«Sever-Metropol» on Oleko Dundich Street in St. Petersburg preserves the recipes of Soviet-era confectionery and has been baking from them for decades. Here they make "Kartoshka" and "Leningradskoye" pastries, "Ptichye Moloko" and "Teatralny" cakes, "Bouché" buns, and almond cookies — the very flavors many St. Petersburg residents remember from childhood. The production's history begins with a bakery-confectionery shop at 44 Nevsky Prospekt, mentioned in the 1903 "Ves Peterburg" yearbook. Back then, people lined up right on Nevsky for fresh pastries and desserts. The production survived two world wars and a revolution, and during the Soviet years confectioners developed recipes that became classics and remain on the menu today. Natural ingredients are used for the desserts: fresh chocolate, condensed milk, natural cream, and butter. Products undergo strict quality control — for example, boiled condensed milk is sourced from Mordovia. In 2007, the production facility built new capacity to keep making these beloved treats using the old recipes.
