«Sever-Metropol» at Bulvar Novatorov, 81 in St. Petersburg is a confectionery with a history that began back in 1903 with a bakery on Nevsky Prospekt, 44. Back then, lines for fresh pastries stretched along the whole avenue, and the business made it through two world wars and a revolution, keeping its craft alive. Here desserts are made according to Soviet-era recipes developed by confectioners of past generations. The "Kartoshka" pastry, "Ptichye Moloko" cake, "Leningradsky" and "Teatralny" cakes, "Bouchée" buns, almond cookies — all these desserts are made the same way they were decades ago. Only natural ingredients go into them: fresh chocolate, natural cream, butter. Boiled condensed milk for fillings and creams is ordered separately from Mordovia — part of the strict quality control observed at every stage here. The kitchen's menu is mixed, but confectionery remains the main specialty. The taste of cakes and pastries that St. Petersburg residents have known since childhood is carefully preserved here through recipes that haven't changed in decades.
