The dough is made with Italian "00" soft wheat flour, which is high in protein and starch, giving the dough a light, airy texture. The recipe uses only flour, water, salt, and yeast — no sugar, fats, eggs, or additives — the same way pizza is made in its home city of Naples. Every morning, the head pizzaiolo mixes a fresh batch of dough, taking into account the day's temperature and humidity and adjusting the amount of flour and yeast accordingly. The finished dough is left to rest for at least 24 hours, during which enzymes break down the proteins and starch and the dough undergoes natural fermentation, which shapes the flavor and structure of the pizza.
