«BeefZavod» on Aptekarsky Prospekt is a restaurant-meat shop with an interior designed like a factory workshop. At the entrance, guests are greeted by museum-style cabinets displaying cuts of the carcass; further in is an open butchering area, a panoramic dry-aging chamber, and factory-style overhead rails with hooks. Around the perimeter of the hall are industrial lamps, metal planters with plants, and an amphitheater of Italian furniture. At the far end of the space is a woodpile and a Grill Works grill, where the main dishes are cooked. The mastermind behind the project is chef-butcher Maxim Torganov, who trained under Tuscan butcher Dario Cecchini, known for his nose-to-tail philosophy and ethical treatment of animals. «BeefZavod» raises its own herd of Aberdeen Angus cattle on natural feed — the meat turns out not marbled but denser in texture, with a more pronounced flavor. The carcass is butchered according to the French scheme, using every part: the tongue is made into carpaccio, and the inner thigh is used for batuta with lemon juice and Ligurian olive oil. The degree of aging is checked every day, so the selection of alternative steaks on the menu changes. The cuisine is European, with an average check of 3,000 to 6,000 rubles. The restaurant is located in St. Petersburg, near the Petrogradskaya metro station, at 2 Aptekarsky Prospekt.
