«Interview» occupies the sixth floor of the Lencom business center in Perm, with the entrance from Permskaya Street. The restaurant stands out for its own cheese-making facility, whose work is visible right from the dining room: guests can watch burrata, stracciatella, mozzarella and an assortment of young cheeses being made. The cheeses are served fresh, with herbs, vegetables and pesto sauce. The menu isn't limited to cheese. The kitchen also prepares Peking duck, lamb heart tartare, bruschettas and spring rolls, grilled meat and pizza. The roasted bone marrow and risotto with pumpkin mousse deserve special mention — dishes that are often singled out among the others. The cuisine combines European and Italian influences with a raw approach, and pasta holds its rightful place on the main menu. For dessert, try the homemade ricotta pie or the chocolate praline with gorgonzola — cheese finds its way even into the sweets here. The average check at the restaurant is 3,000–6,000 rubles.
