Syrovarnya Novosibirsk

«Syrovarnya» on Lenin Street is the Novosibirsk branch of Arkady Novikov's well-known restaurant, previously operating in Moscow and St. Petersburg. The building stretches along the street, with panoramic windows, wood, and greenery inside, and the space is divided into several halls. The scale is unusual for a Siberian city — almost 200 seats. The main feature of the place is its own cheese production. Here they make mozzarella, burrata, ricotta, scamorza, stracciatella, and halloumi, which go into most of the dishes on the menu. The same cheese can be bought to take home at a small shop near the entrance. The kitchen is built around Italian traditions: pasta, pizza, and focaccia make up a significant part of the menu. These are complemented by kebabs, fish, seafood, and dishes made with cottage cheese and eggs. The average check is 2,000–3,000 rubles. The restaurant is located near Garin-Mikhailovsky Square, but the place is so popular that on Fridays and weekends, tables are booked in advance, at the start of the week.
