«Restaurant SOVA» operates at a hotel on Vaneeva Street, near Gorkovskaya metro station. On weekdays the doors open at 7 a.m., on weekends at 7:30 a.m., and guests are greeted with a buffet breakfast: hot meat dishes, porridges, pancakes, muesli, fresh fruit, and pastries. Chef Nikolai Ushakov builds the menu around Russian cuisine, with the restaurant's own smokehouse playing a key role. Smoked items appear in almost every section: salads with smoked pork loin and game, goulash soup with smoked pork ribs, dumplings with smoked suckling pig, beef stroganoff made with smoked beef, Siberian porcini mushrooms, and lightly salted vegetables. Worth special attention are the stuffed pancakes filled with Siberian mushrooms and mashed potato, served with lightly smoked sour cream and soaked wild berries, as well as Siberian dumplings boiled in fern broth. The menu also has room for the chef's own takes on classics: a signature version of Caesar salad, Olivier salad with mortadella, and a salad made to a 1907 recipe. Among the familiar dishes are borscht with baked beetroot, chicken Kiev, and steaks. The bar menu includes a selection of imported wines and house-infused liqueurs made with cranberry, sea buckthorn, and ginger. The average check at the restaurant is 1,000–3,000 rubles.
