Kupecheskiy

«Kupecheskiy» occupies a historic building — a federal heritage landmark on the grounds of the former Kolchin-Kurbatov factory in Nizhny Novgorod, near Gorkovskaya metro station, at 9 Krasnaya Sloboda Street. The facade faces the Volga, a bluff rises above it, and there are no residential buildings nearby — the place feels cut off from the bustle of the city. You can walk there, but it's more convenient by car. The restaurant opened in 1999, and for almost twenty years its kitchen was led by Viktor Smirnov, now chef at Monet. It was he who revived old Russian recipes, which still form the basis of the menu today. The restaurant serves Volga zander, kulebyaka pie, guryev porridge, grey cabbage soup, and pea kissel with onion jam. Sterlet fish soup is cooked over an open flame — on chicken broth with the addition of champagne. The restaurant's cuisine is signature and Russian, and folk performances with singing and dancing are held for tourist guests.
