The restaurant reinterprets Russian dishes with a long history, gathering recipes from across the country, from the Black Sea to the Pacific Ocean. The kitchen works with domestic farms and cooperatives, so only fresh, carefully selected ingredients are used. Meat and fish are prepared in various ways here: roasted over an open flame and in a charcoal oven, braised, stewed, and fried. Traditional methods coexist with modern technology, including dehydration and high-pressure cooking. Chef Denis Kandalov has worked in the culinary field since 2004 and has experience at Ararat Park Hyatt, Lotte Hotel, and St. Regis. Since 2017, he has led the kitchen at Hyatt Regency Moscow Petrovsky Park. His style is marked by attention to detail and the ability to bring out a product's flavor without unnecessary layers. Among his signature dishes is a pistachio-crusted rack of lamb. The restaurant's interior is built around an open kitchen: guests can see the final stages of dish preparation directly from the dining room. The strict, elegant design doesn't distract from what matters most — the food and conversation — making it equally suitable for a business meeting or a dinner with loved ones.
