Kubana Toscana

«Kubana Toscana» is a pizza bar in Krasnodar on Pashkovskaya Street, near the Sennoy Market. The venue occupies a historic building from 1916 and has been open for three years. It serves Neapolitan pizza made by classic rules: the dough, with its puffy rim and characteristic "leopard-spotted" crust, is baked for just 90 seconds at over 450 degrees in a wood-fired oven the team affectionately calls Ferrari. At the same time, the Italian concept is closely intertwined with Kuban produce. Mozzarella for the pizza is sourced from the "Syrnye istorii" (Cheese Stories) farm in the village of Varnavinskoye in the Abinsky district, vegetables and fruit come from the neighboring market, and the flour used is Russian. This approach doesn't stop the restaurant from meeting the standards of the Associazione Verace Pizza Napoletana: the menu includes a classic Margherita with green basil, buffalo mozzarella, and San Marzano tomatoes, as well as a Marinara with tomatoes, garlic, oregano, and olive oil. Besides the classic recipes, «Kubana Toscana» also offers original creations — for example, a pizza with persimmon. Pizza is paired with a cocktail menu, and the average check runs 1,000–3,000 ₽.
