New Kitchen

«New Kitchen» is located on Petersburgskaya Street in Kazan, and while it's not the busiest spot, that doesn't stop guests from coming. In the open kitchen works Marat Vakhitov, who spent three years in the kitchen of Moscow's White Rabbit under Vladimir Mukhin. His cuisine is author's and mixed, and the menu fits on a single A4 sheet. Among the starters, they make forshmak with Borodinsky bread, a crab cake with salmon and shrimp, a salad with eggplant and tomatoes, and milk mushrooms with potatoes. Main courses include sea bass with black rice and sea buckthorn, a marbled veal cutlet with celery purée, and shawarma made Petersburg-style. In desserts, Marat Vakhitov allows himself more freedom, but even there he sticks to familiar flavors: "Borodinsky Bread with Sea Water and Kvass" is crispy crumbs with a bread flavor, kvass soufflé, and prune ice cream. From 8 to 12, «New Kitchen» serves breakfast. The menu includes a casserole with walnut and white raisins, and toast with roast beef and a poached egg. The average check at the establishment ranges from 1,200 to 3,600 rubles.
