Foshnaya

«Foshnaya» on Profsoyuznaya specializes in pho and offers just two options. The first is a classic pho bo made according to a northern Vietnamese recipe: the broth is simmered from bones with no leftover meat, with toasted spices added for a rich flavor. The second is the "afocalypse," a signature dish created by one of the café's founders. Here, a paste made from six types of pepper with honey, vinegar, green cardamom, and lemon is added to the finished soup. Free add-ons are always available on the counter. Every guest can top off their bowl with red onion, chili, lemon, fresh ginger root, or mint, and season the dish to taste with vinegar, sriracha, or Vietnamese hot sauces. The place itself occupies a tiny 15-square-meter space, but every detail has been thought through. The walls are painted ochre, the counter is faced with bright tile, and the atmosphere is rounded out by Vietnamese pop music and retrowave. A special touch is the JVC tube TV, which plays Vietnamese shows, cartoons, and the cult classic "Kung Fury." As for drinks, the menu offers Vietnamese coffee and water. The average check at «Foshnaya» doesn't exceed 1,000 rubles, and you can find the café in the Vakhitovsky district of Kazan.
