«Indian Palace» on Mudlaj Bin Amr Street has been operating in Dubai since 1997 and still holds to the concept it started with: introducing guests in the Middle East to the royal cuisine of India's Mughal era. Over the years the brand has grown from a single restaurant into a chain with more than 14 locations in Dubai, Abu Dhabi, Sharjah, Al Ain and Ras al-Khaimah, but the cooking principles have stayed the same. The kitchen draws on the traditions of India's North-West Frontier, the region behind many recipes of the Mughal imperial cuisine. Meat and other ingredients are marinated and slow-cooked in traditional clay tandoor ovens. The emphasis is on the marinade rather than sauces, which lets the natural flavor of the ingredients come through.
